Soft Chicken Tacos: 20 minutes
Tacos are a family-favorite meal. And this recipe uses budget-friendly chicken thighs for a flavorful and quick-cooking filling. Let's start by making the rub for the chicken.
Combine red pepper and cumin with salt and pepper, and then just sprinkle this mixture over the chicken thighs. Make sure to rub it into the thighs so that it incorporates all of the flavor. Now, you can either cook the chicken outdoors on the grill or inside on a grill pan. You wanna cook it for about four minutes on each side or until it's done. The chicken's done, and you can see all the pretty grill marks. However, we're about to chop it. So, we'll let the chicken rest for about five minutes, just to give it time to reabsorb its juices.
It's time to assemble the tacos. So, I'll add my chicken...some shredded cabbage...cheese...and a dollop of sour cream. And that's it. Serve with some salsa verde and pico de gallo for dipping sauces, and a squeeze of fresh lime.
